The cellars and chalk pits (crayères) of Champagne play a critical role in the making of Champagne by offering ideal conditions for aging: constant temperature, stable humidity and a complete absence of natural light. It is here that the bottles embark on a long period of maturation that can run from several years to several decades. A selection of old photographs from the UMC collection.
