Tasting of the vins clairs (still wines) is in full swing
The cellar masters and their teams taste the vins clairs from the previous harvest, tank by tank and barrel by barrel. This is skilled work that requires a memory of every wine with an eye to the eventual blend.
The Champagne month by month
The Avenue de Champagne in Epernay, formerly known as the Avenue de la Folie (“crazy avenue”), extends for nearly a kilometrer, lined on both sides by magnificent private dwellings lovingly constructed by the Champagne Houses, some as Head Offices, others as the private homes of proprietors. But the real glory of this avenue lies in the treasure trove of Champagne bottles beneath the surface – some 200 million bottles in all, slumbering quietly in the avenue’s 110 kilometre network of cellars.
For five generations, the village of Aÿ has been home to successive generations of the Philipponnat family. First they were growers and purveyors of wine to the court of Louis XIV. Then they became Champagne producers. In 1997 Philipponnat joined the Lanson-BCC group of family-driven Champagne brands.
