The grape

By the end of their 15-month gestation period, the berries have grown into juicy, succulent fruit with a complex structure.

White, sparkling Champagne wines are exclusively made from the clear, delicate juices that are extracted from the grape pulp.

The timing of the harvest depends on anticipated maturity: the time when each grape variety, and indeed each individual cru, is expected to reach peak ripeness.
